An apprentice can choose from National Certificates in:
Craft baking - apprentices learn the skills to create hand-crafted [products from raw baking materials. Craft bakers typically work in bakeries (small, large or wholesale), patisseries, cake shops or café bakeries
Instore/franchise baking - apprentices learn the skills to prepare and bake specialised products. The apprentice will develop specific knowledge and skills in baking and bakery management, as well as skills relevant for work in a commercial baking environment. Instore/franchise bakers typically work in supermarkets with instore bakeries or franchise bakeries.
Plant baking, specialising In Bread, Biscuits, Cakes or Pastry - apprentices learn the skills to produce products in large quantities and deal with mechanical machinery and technology where processes are automated. Plant bakers typically work in medium or large bakeries, or baking plants.
Each of these three areas of specialisation make up a different strand of the National Certificate in Baking (Level 4). Level 2 and 3 National Certificates in Baking are also available. These qualifications focus on core practical skills required to work In any baking envioronment, and count towards the Level 4 apprenticeship.
