Your career options in the Baking industry are broader than you may think - there's a number of ways the principles of food production can be applied. That's why there's a range of baking training pathways available, which include the fundamental training all bakers need plus more specific training to suit the part of this industry you're working in or want to move into.
Level 2 Baking. This qualification is designed for people employed in the varied workplaces of the baking industry and is intended to be an entry qualification for people seeking employment in a diverse range of baking industry roles. This qualification is also designed to provide opportunities to recognise the skills and knowledge of people who are already employed within the industry.

Level 3 Baking. This qualification is designed for baking trainees/apprentices employed in the varied workplaces of the baking industry. This qualification builds on the Level 2 National Certificate in Baking and is designed to expand on relevant industry skills and knowledge and is intended for people already working in baking industry roles.

Level 4 Plant Bread Baking. This qualification recognises the specific skills and knowledge required by an apprentice to produce bread products in large volumes in a plant environment, using automated bakery equipment.

Level 4 Plant Biscuit Baking. This qualification is designed to enable plant baking apprentices to gain recognition for the specialist skills and knowledge required to produce biscuit products in large volumes using automated bakery equipment.

Level 4 Plant Cake Baking. This qualification is designed to enable plant baking apprentices to gain recognition for the specialist skills and knowledge required to produce cake products in large volumes using automated bakery equipment.

Level 4 Plant Pastry Baking. This qualification is designed to enable plant baking apprentices to gain recognition for the specialist skills and knowledge required to produce pastry products in large volumes using automated bakery equipment.

Level 4 Craft Baking. This qualification is designed to recognise the knowledge and specialist skills required for baking craft products within craft baking enterprises. It is awarded to people who are able to demonstrate the ability to prepare, apply, and mix baking products from raw baking materials.

Level 4 Instore/Franchise Baking. This qualification reflects the skills and knowldge required for bakers working in New Zealand Instore/Franchise bakeries and encompasses baking, retailing, merchandising, and bakery management. It is awarded to people who demonstrate the ability to prepare, mix and bake Instore/Franchise products.
