What do they do?
Mixing, preparing, baking and decorating cakes, breads, pastries and/or other goods for consumers to purchase and eat. Baking requires a love for hands-on creative work but bakers also need some scientific knowledge to mix ingredients.

What do we offer?
- We partner with industry associations like the Baking Industry Association and Food and Grocery Council, and members of your industry to help recruit and build talented employees. This support includes promoting careers in your industry, identifying potential baking apprentices, and encouraging work placements.
- We also ensure your industry’s qualifications continue to meet needs, support industry events like conferences, competitions and graduations and regularly celebrate your learners’ success.
- When apprentices enrol, we assign them a Competenz account manager. Our account managers understand the food and beverage industry and the skills learners and businesses need to gain.
Guiding all this work is a Sector Advisory Group made up of members from your industry. This group meets regularly to advise us on the industry’s strategic direction and skills and knowledge needed. It also gives us feedback on how well we are meeting these needs.
National Certificate in Retail, Level 2
This programme will engage and up-skill your front line bakery team by developing their skills in communication, creating a positive impression, providing excellent customer service plus all the basics of food safety and health & safety.
National Certificate in Baking, Level 2
This qualification is designed for people employed in the baking industry, and is intended to be an introduction to a diverse range of baking industry skills. This qualification is also designed to provide opportunities to recognise the skills and knowledge of people who are already employed within the industry.
National Certificate in Baking, Level 3
This qualification is designed for baking trainees/apprentices employed in the varied workplaces of the baking industry. This qualification builds on the Level 2 National Certificate in Baking and is designed to expand on relevant industry skills and knowledge and is intended for people already working in baking industry roles.
National Certificate in Baking (Plant Baking) – Bread strand, Level 4
This qualification recognises the specific skills and knowledge required by an apprentice to produce bread products in large volumes in a plant environment, using automated bakery equipment.
National Certificate in Baking (Plant Baking) – Biscuit strand, Level 4
This qualification is designed to enable plant baking apprentices to gain recognition for the specialist skills and knowledge required to produce biscuit products in large volumes using automated bakery equipment.
National Certificate in Baking (Plant Baking) – Cake strand, Level 4
This qualification is designed to enable plant baking apprentices to gain recognition for the specialist skills and knowledge required to produce cake products in large volumes using automated bakery equipment.
National Certificate in Baking (Plant Baking) – Pastry strand, Level 4
This qualification is designed to enable plant baking apprentices to gain recognition for the specialist skills and knowledge required to produce pastry products in large volumes using automated bakery equipment.
National Certificate in Baking (Craft Baking), Level 4
This qualification is designed to recognise the knowledge and specialist skills required for baking craft products within craft baking enterprises. It is awarded to people who are able to demonstrate the ability to prepare, apply, and mix baking products from raw baking materials.
National Certificate in Baking (Instore/Franchise), Level 4
This qualification reflects the skills and knowledge required for bakers working in New Zealand Instore/Franchise bakeries and encompasses baking, retailing, merchandising, and bakery management.
It is awarded to people who demonstrate the ability to prepare, mix and bake Instore/Franchise products.
